Event description
The seminar presents the research method developed for Modernist Cuisine, Modernist Bread and Modernist Pizza: parametric experimental design, controlled variables, systematic iteration, full documentation and the encoding of recipes as queryable data structures. This computational approach to culinary knowledge — measuring, formalising, generalising — is applied to the development of new rainbow-trout products: mapping of process variables, test matrices for cures and cooking, objective and sensory selection criteria, and scale-up from laboratory to industry. The result is an operating model connecting professional gastronomy with computational gastronomy, directly transferable to the design of the innovative product envisaged by the trout project.
